Singapore’s culinary footprint in London

Following its launch in Singapore in late April, the Singapore Takeout headed for London where it enthralled crowds between June 9 and June11.

Led by Singapore's own Janice Wong, chef-owner of 2am: dessertbar, in collaboration with Peter Gordon from The Providores and Tapa Room, the event featured modern, Singapore-inspired gastronomic delights.

A new generation of culinary trailblazers like Janice Wong is leading the evolution of Singapore's street food from its humble heritage to its reinvention into an innovative, international, yet distinctly Singaporean cuisine that tastes authentic and is visually spectacular.

Guests were treated to dishes such as Lemongrass-infused Laksa Dumplings, Sweet Salty Popcorn with Yuzu Caramel and Blood Orange Snowballs, which were available exclusively at the Singapore Takeout pop-up kitchen in the Riverside Walkway, owned and managed by Coin Street Community Builders, at Southbank, London.

Janice Wong is a graduate from the prestigious Le Cordon Bleu in Paris, Janice has worked in some of the world's best restaurants, including Wylie Dufresne's WD50 in New York, Alinea in Chicago and Thomas Keller's Per Se.

She has collaborated with other culinary stars such as Juan Mari and Elena Arzak of Spain's three Michelin-star hot-spot Arzak and the celebrated patissier Pierre Hermé.

Often called Europe's father of fusion cuisine, Peter Gordon embraces ingredients and methods from the Pacific Rim and far beyond. The chef and co-owner of The Providores and Tapa Room in Marylebone Village and the new Kopapa in Covent Garden, Peter is also the man behind six cookbooks, numerous TV shows, a range of food products and two restaurants in New Zealand.

In addition, he consulted for the highly successful UK chain, Gourmet Burger Kitchen, and the critically-acclaimed Public in New York.

A total of 25 selected members of the public were given a chance to get up-close and personal with Janice Wong in her 45-minute cooking demonstrations on June 10 in which she revealed her recipes for dishes such as Chilli Chocolate Corals.

After London, the Singapore Takeout will continue its culinary adventure to Paris, followed by Moscow, New York, Hong Kong, Shanghai, Delhi, Dubai and Sydney.
